Wonder Bread
Put the following ingredients in your bread machine, and run the dough setting:
1 1/4 cups water
1/4 cup unsalted butter − melted
4 cups unbleached all−purpose flour
1/4 cup semolina
2 tablespoons sugar
2 teaspoons salt
4 1/2 teaspoons dry yeast
Form into an oblong loaf and place it in a lightly greased 9" x 5" loaf pan or a 8.5"x4.5" pan and a 3"x5" pan. Put pan in a food and bread bag; allow dough to rise until the it is about 1 inch above pan rim.
Brush with melted butter.
Cook at 350F for 30 to 35 minutes or until evenly browned.
I really liked this recipe, and the use of some semolina flour facinated me because normally semolina flour is considered unsuitable for making bread, because it is made from durum wheat which is so hard that dough made from it does not rise well. Next time I make it, I would like to try adding some whole wheat flour.

Taco Soup
Saute:
1 lb hamburger
2 chopped onions
Drain fat.
Add:
32 oz canned corn, undrained (Two 16 oz cans)
32 oz canned chopped tomatoes, undrained (Two 16 oz cans)
16 oz tomato sauce (Two 8 oz cans)
1 can (16 oz) kidney beans, undrained
1 can (16 oz) chili
2 pkg Taco seeasoning, or about 4 Tbs - I use the stuff in a plastic jar from Costco
1 can (7 oz) diced green chillies
Simmer 20 min; serve over crushed corn chips, with grated cheddar cheese and sour cream.
This makes fabulous leftovers, and it has been a favorite of my family and extended family for years. Many thanks to the neighbor who gave me the recipe, because we've really enjoyed it!

Mexican Wedding Cake
aka Sweedish Wedding Cake
I was asked to make this last night for a birthday, and it was really quite good and very easy. I didn't have any crushed pineapple on hand, so I put a can of sliced pineapple through my food processor. I am interested to try it with the crushed pineapple that was originally called for.
Mix:
2 c flour
2 c sugar
1 tsp baking powder
1 tsp baking soda
2 eggs
1 (20 oz) can crushed pineapple
Bake in a greased 9x13 pan at 350 F for 35 min.
I got the recipe from http://www.recipelink.com/mf/31/10474 and they recommended that I serve it with cream cheese frosting. I used up some lemon frosting I had on hand instead, though, and I highly recommend you try it :).

Rice, Pepper Steak Skillet
RICE, PEPPER STEAK SKILLET

1 1/2 lb. round steak, cut in thin strips
2 tbsp. oil
1 chopped onion
1 c. rice
1 can beef broth
1 can water
3 tbsp. soy sauce
2 green peppers, coarsely chopped
1 jar pimientos, sliced and drained

Brown steak in oil in a 10-inch skillet; add pepper. Stir in onion, rice, beef broth and soy sauce. Bring to a boil. Reduce heat, cover and cook over low heat until liquid is absorbed, about 25 minutes. Stir in pimiento. Heat through. Serves 4-6.
I tried this for dinner tonight, preparing it exactly as the recipe above detailed. I used a 4 oz jar of pimentos (the recipe didn't specify), and it's definitely a repeat recipe! Let me know if you try this, and how it turns out.

Egg Salad

I tried a new egg salad recipe, and (unlike the spinach with mushroom sauce I made for dinner last night - which I was really excited for, but which I barely choked down when it was finished) I liked it well enough to share it. I've already modified it a bit, so here is the way I initially recommend making it:
Combine:
3 hard cooked eggs, chopped
1/4 c small-curd cottage cheese
1 celery rib, chopped
2 Tbs pickle relish
3 Tbs mayonnaise
1 tsp Dijon mustard
salt, pepper, dill, tumeric, and chili powder to taste
Spread more dijon mustard thinly on bread; then add salad, lettuce, and mozzarella cheese to make a sandwich.
If you try this recipe, please leave a comment and let me know how it went! I plan to try making it again soon, substituting plain yogurt for the mayonnaise. Once I do, I'll comment and let you know how it turns out.
